Egg & Soldiers
I admit it. I am definitely an anglophile. I have spent the majority of my life living in the USA, but I am the daughter on a Danish father and a Belgian mother. I was born in Belgium and my Nana was 100% English. That translates into me being only quarter English, but I have always been drawn to all things English - the homes, the gardens, the towns, the traditions, the people, the history. You name it. And on rainy mornings when I make my children egg and soldiers for breakfast and don my orange wellies to walk to school in the rain I like to pretend I'm a little more than just a quarter English. Growing up I had egg and soldiers many a mornings before school seated at the kitchen table with my brother while my Mum prepared our lunches in her dressing gown. My children have it at least 3X a week and it makes me happy to know I've continued this simple little breakfast tradition. In case you don't know, it is a soft boiled egg cracked open, sprinkled with salt and served with slices of buttered toast (the soldiers) that you dip in the egg.
