Recipe | Best Weekend Belgian Waffle Recipe



I know I've posted waffles recipes before, but this one is new to me and became an instant favorite.  As much as I love my overnight Belgian waffles recipe, it's one that requires planning ahead.  I'm not much of a planner.  Especially when it comes to weekend mornings.  We woke up to chillier temps today and after a walk with Quincy, all I was craving were these waffles.  The recipe comes from my girlfriend's husband and is a long time family favorite in their home.  Recipes from friends tend to become my favorites too.

These are very hearty, which I like.  One waffle is a meal.  They are crispy on the outside and chewy and soft on the inside.  One of my biggest complaint with other waffle recipes is that they don't feel very substantial and you have to eat a few to feel full.  The flavor and smell remind me so much of Juice Bar waffle cones on Nantucket, just in a Belgian waffle size.  What could be better?!

Here's the recipe:

T. LANE WEEKEND WAFFLES

Ingredients:
2 cups all purpose flour
3/4 cups granulated sugar
3.5 tsp baking powder
2 large eggs, whites and yolks separated
1.5 cups whole milk
1 cup melted butter
1 tsp vanilla
Belgian Pearl Sugar
Toppings: powdered sugar, berries, maple syrup

1. Combine flour, sugar and baking powder in a large bowl.
2. Combine egg yolks, milk, and vanilla in a large measuring cup
3. Add milk/egg mixture and melted butter to bowl with flour mixture.  Stir together with a plastic spatula.
4. Whip egg whites to stiff peaks with electric mixture.  Fold into batter.  Careful not to overmix.
5. Let batter rest while you warm up waffle iron. I cooked mine on setting 5.
6. Add batter to iron and sprinkle top with pearl sugar.  Cook.
